My hols start today, I went to school on Wednesday and Saturday and spend my time doing my admin duties. Anyway I am quite preoccupied by the house stuffs and for the last few days we went shopping before the pay day.

#373 : Tibadak Cake : Recipe # 220
Ingredients
1 block butter about 250gm
1/3 cup vanilla sugar + 1 tbsp red sugar
4 eggs
250 gm self-raising flour
1 rice bowl shredded "tibadak" ( Jackfruit family)
Method :
- Heat oven to 180 - 200 deg C.
- beat butter and sugar till fluffy.
- Add in eggs one at a time, alternating with flour.
- add in milk and mix in.
- add in mash fruits.
- Check the consistency of the batter. It should be of dropping consistency.
- Pour into cupcake casings and bake for about 20 minutes.

#371 Thanks Love ....
It was my birthday yesterday. Yes, I still belong to the "3" series group ... next year I will be upgraded to the "4" series. I received a number of gifts, Lots of SMS and comments on my Face book's wall and also in my shout box . To all, thank you very much...they really mean a lot to me... My two biology blocks were singing Birthday song in the class yesterday... Frankly, I was touched... but at the same time a bit embarrassed. Yes, I am quite an outspoken person on the outside, but surprise, surprise... I am actually an Introvert. LOL!
The most meaningful dedication came from this someone ..... Thank you abang :) Love you too from the bottom of my heart.

#370 My Leaving visitors
Life goes on. Many of our students are now pursuing their studies either in Brunei or Overseas. Today, I felt honoured to be visited by three of them. Huda, Zimah and a friend. El was at the MOE signing her contract. Congratulations to all of you and thank you for coming.

#363 Vietnamese Fried springrolls:recipe #219
Makes 10
Ingredients :
Vietnamese rice paper ( soak in warm water before using to soften)
egg wash ( use as a "glue")
filling:
Mix together in a bowl:
1 roasted garlic -chopped
2 chicken fillets - sliced
1 small egg
1/2 carrot-shredded
1/2 cup bean sprouts- chopped
1/2 cup soaked rice vermicilli
freshly grounded white pepper
chicken stock powder to taste
steps:
1. In a wok, fry the garlic with a little oil.
2. Add the filling mixture, and fry until cooked. Adjust flavour.
3. Put the filling into the softened rice paper and roll them just like rolling the usual popia skins.
4. "glue" with egg wash
5. medium fry the spring rolls until done. Serve with your favourite chili sauce
