#404 : Savoury Carrot and Feta cheese muffins


Ingredients:
1 and 1/2 cup grated carrots
2 and 1/2 cup all purpose flour
3 tsp baking powder
1/2 tsp salt
2 large eggs
1/4 cup sun flower oil
8 oz feta cheese , cut into small cubes
1 cup yogurt

steps:
Preheat the oven to 180 degree
grease 12 cup muffin pan
Combine the dry ingredients in a bowl
beat the eggs , yogurt and oil in a bowl until smooth.
gradually add in the dry ingredients until just combined
stir in the carrots and feta
spoon the batter into the prepared pans.
Bake until well risen and springy to the touch
Let cool slightly before turning out onto a wire rack

#218: Oreo muffins : recipe #145


Dayini's favourite. She ate this for breakfast and brought some to school for her "bata"

Ingredients:
Mix together in a bowl:
2/3 cup sunflower oil
2/3 cup milk
1 tsp salt
1 egg

Dry ingredients:
-1 cup flour ( add if necessary)
-1 tsp bicarbonate of soda

- 1 packet 150g Oreo- break up to large pieces

steps:
Add the wet ingredients to the dry ingredients, stir well.
Add in the oreo pieces and mix well to combine
put the mixture into muffin pan
bake in a preheated oven at 160 degrees for 15 minutes or until the muffins are cooked.

#39 BREAKFAST CHOCOLATE PRUNE MUFFINS: recipe #21


As always, I had a sudden "rush" to bake something, so I looked through the cabinet and here is something I came up with:

Ingredients:
3/4 cup oil
1 egg
3/4 cup sugar
1/2 tsp Bicarbonate of sugar
1/2 tsp salt
1 dsp cocoa powder
1/2 tsp vinegar
1/2 cup milk
1 and 1/3 cup flour
3/4 cup sliced prunes

steps
1. put everything in a mixer except for the prunes. Beat till well mixed.
2. Add in the prunes
3. Bake in a preheated oven at 160 degrees for 13 or until muffins are done.

#10 HIGH FIBRE MUFFIN; recipe #7




I did mention in the previous post that my hubby is into this "health" thingy. Last night, he had challenged me to bake a "healthy" muffin. So, this morning, I went to my kitchen, rummaged through the kitchen cabinets and this is the recipe I came up with...... :) Warning " THIS RECIPE IS NOT FORTHE SWEET TOOTH"

"THE" muffin

Ingredients:
1 handful big raisins
1 handful walnut
1 handful rolled oats
2 handful cut apples
1 medium egg
1/3 cup sunflower oil
1/3 cup skim milk
1dsp honey
blueberry for filling
1 and 1/3 cup self -rising flour

steps:
-mix everthing in a bowl
- fill in the muffin cup halfway.... put in the blueberry and top up with the mixture
-bake at 160 degrees celsius until done.

Eat while warm..... mmmmmmm....
