It's Ramadhan tomorrow. To All Muslims, Happy Ramadhan , Hope our deeds and prayers will be answered by Allah the Almighty.

By tomorrow, it's 20 more days before Auni will sit for her PSR Examination and 23 more days before my students are sitting for their A'level examinations. So to all, Happy Ramadhan and Selamat Hari Raya. I will only check my e-mail every Monday, so any inquiries please e-mail me at aunidayini@hotmail.com

#265 Mung bean biscuits; Recipe #159


Ingredients:
1 cup butter
1 cup icing sugar
1 cup mung bean flour
3 cups all purpose flour

steps:
cream sugar and butter till fluffy
add in the mung bean flour, mix well.
lastly add in the all purpose flour and mix till the side of the bowl is cleaned.
shape the biscuits with biscuits cutter of your choice
bake at 160 degrees for about 20-25 minutes or until the biscuits are cooked.

#264:Cacah Ambuyat: binjai&tempoyak: recipe #158


Someone asked me how did I prepared my ambuyat's cacah... so here it is
Ingredients:
A)
pickled binjai
tempoyak
bird's eye chillies
shrimp paste
dried shrimps

B)
Kesturi juice
sugar (optional)
sliced chillies
soup from "lauk rabus" or "udang rabus"

steps:
blend A for about 1 minute
Add B and mix thoroughly
serve with ambuyat

Note: Bruneian dishes are usually prepared by estimation. This is to allow flexibility in the taste of the dishes. If I am preparing the cacah, I will put in more shrimp paste and kesturi juice. My dad would prefer less kesturi juice because he is not into "sour" taste. If you have extra "cacah", you can make "sambal tumis tempoyak-binjai" out of it. All you have to do is to fry sliced garlic, large onion and more chillies, then add in the "cacah" and slowly fry the mixture over small flame till the mixture thickens... see picture below :)

#263: Nestum chocolate chips biscuits: recipe#157

Everyday for the past few days Darwish told me that he wants to eat chocolate chip cookies. I have limited supply of butter, so instead of making cookies, I made biscuits instead. These biscuits are small, bite-size and crispy which are suitable for Hari Raya. You can put your faourite toppings to make them more "gorgeous".

Ingredients:
half cup butter
half cup icing sugar
half cup nestum
half cup chocolate chips
one and a half cup flour.

steps:
cream butter and sugar till the mixture is light yellow.
Add in the nestum, stir.
Add in the chocolate chips, stir.
Lastly, add in the flour and mix till a dough is formed.
Shape biscuits using your favourite biscuit cutter.
Place biscuits in a cookie pan and bake in 160 degrees oven for 20-30 minutes or until the biscuits becomes golden brown.
When cooked, leave the biscuits in the pan for 5 minutes before transferring them on to a wire rack.
yield: 50 biscuits.

#262: Phillipine Ube cake: recipe #156


I bought the Ube ( Ubi Belayar@ keladi Ungu) at the pasar borong yesterday. I wanted to make some muffins out of it but had changed my mind, so I bake a cake instead using my 10"X10" cake pan.

Ingredients:
1 cup fat
1 cup sugar
3 eggs
3 cups mashed cooked Ube
1/2 cup coconut powder
3 cups flour
2 tsp cream of Tartar
1 tsp bicarbonate of soda
1 tsp salt
purple colouring ( optional)

Steps:
1. Cream fats and sugar till creamy.
2. Add in the eggs, stir till combined
3. Add in the rest of the ingredients and stir to mix
4. Lastly, add in the flour.
5. Pour the mixture into greased pan and bake in a preheated oven at 160 degrees for about 30 minutes or till cake is cooked.

#258: FAREWELL...

Today, we had a short farewell party for 3 colleagues, two of whom are very dear to me. These two are my junior colleagues who also happen to be my "neighbours" in the main staffroom. I first met Rahijah and Manja during the December holiday 2005, when I reported for duty after finishing my Masters degree. Rahijah was from STPRI and we shared good moments especially when it comes to food time during the holiday. Manja was from MD but was taking her leave as she had her wedding in December 2005. Since there were very few locals we and few others were always involved in the school activities. Manja will be doing her Masters in the UK, while Rahijah is promoted to HOD IRK in SMSAB. Miss you both :(

#257 : Apple walnut muffins: recipe #155


Ingredients:
A
1 Fuji Apple- cut into small pieces
1 handful walnut- chopped
3 cups flour
1 cup sugar
2 level tsp bicarbonate of soda
2 level tsp salt
3/4 cup instant oats
1 tsp cinnamon

B
1.5 cup oil
2 cup skim milk
1 egg
2 tbsp vinegar

steps:
1. Put A in a bowl and B in another bowl- mix thoroughly saparately.
2. Combine A and B and stir to mix
3. Put mixture in cupcakes and bake at 160 degrees till done.

#254: Honey garlic sesame chicken : recipe #154

The picture speaks:
Ingredients:
10 wings, seasoned with salt and pepper, coated with original Kentucky flour, deep fried till crisp.
roasted sesame seeds

Honey sauce:
2 garlics~ chopped
2 tbsp Honey
1/2 tsp mustard paste
1/2 tsp sesame oil
chicken stock powder
corn flour slurry
1 tsp "kesturi" juice ~ you can use lemon juice as well

Steps:
In a wok, fry the garlic till fragrant.
Add in the rest of the sauce ingredient and simmer till sauce thickens.
Adjust seasoning before adding the wings and the sesame
Add in the chicken and sesame and stir till the sauce coats the wings.
Dish up

#253 : Pesta Sukan Remaja 2007- closing ceremony



Tutors and Maths lower sixth students were involved in the closing ceremony as spectators at the National Stadium. There were a few ocassions when we had to find shelter due to the heavy downpour at the stadium. I was not able to take lots of pics as I was scared that my SLR will be damaged . I am yet to upload some of the pics at my photoblog and to SLY, if you happen to visit this blog, I think I will post all to my back up blog ;) See you there!

#252.. Ambuyat time..

Auni have been asking me when will the next "Ambuyat" time. This morning at Jerudong Market I bought fresh "tenggiri" fish and prawns (yay!) . At the "pasar borong" at Selayun, I bought the ingredients for the Ambuyat feast including "tempoyak", "jaruk binjai", "lemiding", "tibadak" and others. I also bought "candas" for the occasion. So , it's ambuyat for today's lunch and here's some of what we ate ..

#251 mmm......

I was "hired" by my boy students to help them in the "business" that they have proposed. They came up with the idea of ice-cream served with some sort of ice-cream biscuit and cake. They have tried so many recipes but some how was not able to come up with the right one. So, I came up with pie biscuit filled up with my black brownie .. this was how it looked like... I asked my children to "test" the product and they liked it very much .. So.. Good Luck boys!

#248 HONEY MUSTARD PRAWNS: recipe #154

My picture speaks.....
Ingredients:
15 large sized prawns - cleaned, deveined and "rub" with a little salt and white pepper powder
3 garlics- chopped
2 tsp mustard sauce
2 tsp honey
1 dsp oyster sauce
1tbsp dark soy sauce
juice from 1 kesturi or you can use juice from 1/4 lemon
1 kesturi-sliced
corn flour slurry

steps:
1. In a wok, shallow fry the prawns till done.
2. retain about 1 tbsp of oil used,fry in the chopped garlic.
3. Add in the sauces ,honey and a little water. Stir till combined.
4. Add in the prawns, stir to evenly coat the prawns and the sauce.
5. Add in the corn flour slurry and the kesturi including the juice.
6. cook till gravy thickens and dish up.
